Noughty Blanc - Alcohol-free
The Noughty De-alcoholised Blanc is an alternative to white wine made from Chardonnay and Chenin Blanc grapes. These grapes are harvested from dry-land cultivated vineyards in the Western Cape region. The vineyards are strategically planted on slopes facing south-west to catch cool breezes from the Atlantic Ocean and the cold Benguela current. Deep soils of decomposed granite, rich in clay, with good drainage.
After a 14-day fermentation at 14-15°C, the grapes and juice are treated reductively to prevent oxidation and retain fruitiness. The wine remains on lees for 2 months to add complexity. The wine is then de-alcoholised using gently rotating cone technology. This is done under vacuum and at low temperature to ensure the wine retains its characteristic body, colour and flavour.
